Combine corn meal mix, sugar and soda. Add buttermilk, egg, oil, onion and cheese. Stir until well blended. Pour batter into greased 9-inch square pan. Bake 25 to 30 minutes or until well browned. *If corn meal mix is not available, substitute:
1 1/2 cups corn meal, 1/2 cup all-purpose flour, 1 tablespoon baking powder and 1 teaspoon salt. Provided by Shawnee Milling Company
